Ingredients: 1 ½ kg pork, 2 small pieces of cinnamon, 4 onions, 2 small pieces of ginger, 12 cloves, 5 green chillies, 2 pods garlic, vinegar and salt to taste, ½ green plantains or potatoes or sweet potatoes or radish roots.
Grind together to a fine paste: 25 dry chillies, 10 peppercorns, 2 tbsps coriander. 2 tbsp vinegar, 2 tsps jeers, ½ inch piece of turmeric, 2-3 cinnamon leaves, water as required, salt to taste.
Method: Grind masala. Cut meat into convenient pieces and wash. Slice onions, green chillies, ginger, and garlic. Mix pork pieces with masala and add sliced onions, green chillies and garlic, ginger and also cinnamon and cloves and mix well adding a little water, salt and vinegar to taste. Cook till the pork is almost done and tender. Now, add the cut and washed pieces of vegetables and continue to simmer till vegetables and pork well cooked.
