Egg balchow



Ingredients: 8 eggs, 5 grms chillies, 1/4 kg onions, 10 dry chillies, 1 big piece ginger, 1 pod garlic, 1/2 table spoon cumin seeds, 5 curry leaves, 1 table spoon pepper corns,3 one inch pieces turmeric, 3 table spoon ghee, coriander leaves and salt to taste.

Method: Scramble the eggs and keep aside. Chop the onions and fry them in ghee in a saucepan until light brown and then add the grinned masala of pepper corns, dry chillies, cumin seeds and turmeric. add the scrambled eggs and stir and simmer the whole mixture until brown on moderate fire. Slice the remaining masala ingredients and add them to the mixture and let it simmer in ghee until the ghee floats on the surface of the balchow.
