Stuffed Eggs



Ingredients: 10-12 hard boiled eggs, 6 table spoon mayonnaise, 3 table spoon minced cooked ham (or any other meat mince), 2 table spoon very finely shopped parsley, salt to taste, 1 table spoon sugar.
Method: Peel eggs and halve lengthwise. Carefully remove the yolks into a bowl. Mash eggs yolks with fork, blending in the ham, mayonnaise, parsley and sugar. Fill whites with this mixture using a pastry tube or small spoon. Garnish each with a small spring of parsley or chopped tomato.
